This morning was a lovely sunny morning and I fancied something Mediterranean, yes even for breakfast. I wanted something fresh and vibrant so without further a do I made Morning Bruschetta. You can see how sunny it is in the photo.
All I did was quarter 9 cherry tomatoes from the vine and mixed with ½ a small onion finely diced and a glug of olive oil and a drizzle of balsamic vinegar. Mix in salt and freshly ground black pepper and there you have it. Some people might say that this isn't a traditional bruschetta, but I don't care it tasted delicious! One thing I forgot to put in which I meant to was fresh basil leaves, but it still tasted divine.
